Montinhoso – easily mistaken for "Montanhoso" (the Portuguese word for mountainous) – is a neighbourhood southeast of Lisbon, across the Tagus River in Palmela. The land is home to a sanctuary of rescue horses, as well as human residents and a richness of vegetation. Plans to build a holiday resort in Montinhoso make the most of this idyllic landscape: a project centred around “farm-to-table” gastronomy, where each stage of the food process – the farm, the table, and everything in between – is designed to form a complete and cohesive experience.
The accommodation is imagined as a village of villas, each private but interconnected through a network of pathways that lead to communal spaces, including a restaurant, spa, and gym. The villas are modular, offering flexibility in their layout, with individual units combined to form larger family-oriented units. Their modularity also allows the villas to be strategically set into the landscape, with low-lying profiles that integrate into the natural topography.
Among the accommodation, the scheme incorporates allotments, bee farms, orchards, and other opportunities for agricultural production that directly translate into the resort’s culinary offerings. The menu (designed by award-winning chef Virgilio Martínez Véliz) changes seasonally, reflecting the available produce and underscoring the project’s commitment to sustainability and local sourcing. The surrounding wilderness is preserved, with the horses continuing to roam freely across the grounds.
